my favorite pumpkin recipes

My recipes are very unorganized.  I have three different places in the kitchen where a recipe could be, plus everything online.  Often, I get online for a favorite recipe, but can't remember the website...so this post is for me to remember all my favorite pumpkin recipes in one place.

Pumpkin season is coming to a close now that Thanksgiving is over.  My family LOVES everything pumpkin, except pumpkin pie.  Here are our favorites.

Start off those cool fall days the right way-- with a few slices of Pumpkin French Toast!

6 eggs
3 C sugar
1 large squatty can pumpkin
1 tsp. vanilla
1 1/2 C oil
3 C flour
2 tsp soda
1 1/2 tsp. salt
1 T cinnamon

Frosting:  8 oz cream cheese, softened, 1 C butter, softened, 1 tsp. vanilla, 3 3/4 C powdered sugar

mix together and bake at 350 for 30 minutes in a greased and floured roll pan

the best runner up pumpkin bars --Pumpkin Spice bars with cinnamon cream cheese frosting (from a woman in my current ward, Carla Johnson)

3 1/4 C flour
1 T baking soda
1 T ginger
1/2 tsp cloves
3/4 tsp salt
5 eggs
2 3/4 C sugar
1 C vegetable oil
1 T vanilla
1 C buttermilk
2 C canned pumpkin puree

in a mixer, whip eggs and sugar until light and fluffy and mixture triples in volume.  reduce mixer speed and slowly add oil, vanilla and buttermilk.  add dry ingredients and pumpkin.  bake 55 minutes at 350 in a large 15 1/2 x 10 x 2 1/4 pan.  ( I used a regular cookie sheet and used almost all batter, but not quite all)  frost with your favorite cream cheese frosting with a little cinnamon mixed in.
